and symbolises knowledge and wisdom: knowledge for distilling the best

Products
In the marvellous world of whiskies, an important part of the
character of a whisky is created during its ageing process. During this
period, the angels mysteriously and magically take their share. Their
action, ‘The Angels’ Share’ impregnates the whisky and gives it a major
part of its specialness, its character…
The time needed for the ageing process to create the whisky lasts a
minimum of three years. Before the end of this three-year period, the
distillate is called Spirit. After this three-year period, the
distillate becomes … Whisky!
Etienne Bouillon has always been curious to taste his products at all
stages of its distillation. He thought that he was not perhaps the only
person to be curious, and so to share this curiosity, he decided to
bottle The Belgian Owl at various stages of its distillation.
The Owl Distillery would like you to discover The Belgian Owl Belgian Single Malt in four forms, both Spirit and Whisky:
- ‘Non-aged’ Spirit: discover the region’s olfactory passport on which the barley is grown.
- Spirit ‘under the ageing process’: this is the beginning of the interaction between the distillate and the cask during the first three years.
- Whisky: after three years and more, the ageing process in the cask has revealed its secrets. The whisky will have a volume of 46%.
- ‘Straight from the cask’ Whisky: plunge into a cask at a precise moment of the ageing process. The whisky will have a volume of around 70%.
From barley to bottling, all the production stages are carried out in Belgium.
As well as its artisanal side, The Belgian Owl is unpeated and
distilled in a ‘Pot Still’ (a swan-necked still). So as to best conserve
the product’s rich aromas and scents, The Belgian Owl is bottled
without being cold filtered. Moreover, the natural colouring that comes
from each cask is retained. Because of this, each bottling of The
Belgian Owl can be slightly different from another bottling even though
the ageing period is the same.
